Indian achar, or pickles, have a rich and diverse origin deeply intertwined with India’s culinary heritage. Dating back centuries, the practice of preserving fruits and vegetables through pickling was initially driven by the necessity to store seasonal produce for extended periods, particularly during the off-seasons or in regions with extreme climates.
